Shellfish
The waters of West Scotland are rich in shellfish. Many of the villages around
the coast have domestic fleets landing king prawns - also known as langoustine
and Dublin Bay Prawn. Where possible, we source creel (pot) caught prawn due to
the superior quality and also as this has a less damaging environmental impact
and is more sustainable.We also have a thriving scallop industry - again we
try to source from dive caught sources to maximise quality.
Other shellfish that we see throughout the year include some of the finest
mussels, outstanding lobsters and delicious crab. We also offer squat lobster,
green and mud crab, crayfish, winkles and some seasonal varieties where we have
the opportunity/demand.
Whilst many supermarkets and factory based suppliers use overseas supplies,
if you have tried Scottish shellfish, you will know that the cold water
varieties we offer are far tastier and offer a richer flavour and texture that
is hard to match throughout the world.
Live Supplies
Our main delivery service is for live shellfish. It is not uncommon for our
shellfish to be landed and delivered within 12 hours and our handling, storage
and shipping policies maximise the quality and end result of all our products.
Cooked Produce
We also offer cooked produce, especially at markets and events where a pint of
cooked prawn tails are always a popular choice for those who visit our stalls.
Other options include dressed crab, winkles and lobsters. We can also offer cooked produce to those who wish to be supplied for themselves
or a function. We also offer a range of wet, prepared and smoked
fish.
As well as attending markets and events, we also
have a regular fish run touring many of the
surrounding villages and towns in the Highland. Please contact us with any such requests.
